Add a little water at a time to form a thick, moldable dough — not runny.

Let the mixture rest for 10–15 minutes to allow the flavors to blend.

Heat oil in a deep pan over medium flame.

Take small portions of the dough, shape into flat vadas (round with a hole in the center).

Gently slide into hot oil and fry until golden brown and crispy on both sides.

Remove and drain excess oil on paper towels.

Serve hot with coconut chutney or mint chutney.
